Fresh & Light Fruit Smoothie Bowls

I used to wake up in the morning and crave eggs and bacon. Now that I've eliminated animal products from my diet I just crave fruit! These breakfast bowls are another great way to get your nutrients in the morning on a vegan plant-based diet. Not to mention there are so many variations you can make and you can make them ahead of time for a yummy breakfast on the go!

The easiest variation for me I have made so far is a banana, mango, peach, and pineapple. Here's what you'll need: 

 

Ingredients: 

  • 1 banana

  • 1/2 cup frozen pineapple chunks

  • 1/2 cup frozen mango chunks

  • 1/4 cup frozen peaches

  • 1 can coconut milk

  • 1/2 cup granola of your choice

  • Optional-agave to drizzle

Instructions: 

  • Blend together banana, pineapple, mango, peaches, and coconut milk. (*Tip: if you have a food processor of any kind use that! A blender, in my experience, did not create a smooth consistency. It came out to be a bit chunky before I mixed it in a food processor)

  • Once blended and smooth, pour into a bowl, place slices of banana on top with granola of your choice (I like to use hemp and flax seed granola)

  • Optional-drizzle with agave
