Candied, Glazed Sweet Potatoes

These candied, glazed sweet potatoes are sure to be a hit at your next holiday or family gathering and so easy and simple to make! 

Growing up during the holidays, my mom’s sweet potatoes were one of my favorite dishes. They always mixed perfectly with dinner rolls and her famous Mac and cheese. Until I went vegan, I had no idea how good sweet potatoes are for you. 

Sweet potatoes it turns out are highly nutritious. They are a great source of fiber, minerals, and vitamins which is said to help to fight cancer, promote gut health, and even help support your vision. 

Since becoming vegan I have really enjoyed eating sweet potatoes and they are now a staple vegetable in our home. My boyfriend is a vegan body builder and sweet potatoes are great for him to have to help him bulk up so we make them frequently for dinner as a side, meal prep, and to include in our Buddha bowls.

Now this recipe below I created specifically for those Holiday get together so they are quite sweet and heavier than the sweet potatoes we make during the week.

Typically during the week we will take 2-3 medium sized sweet potatoes and chop them up and place them in our air fryer at 400 degrees for about 10 minutes after tossing them in a little bit of olive oil, salt, and pepper. So if you are looking for a healthier alternative to making sweet potatoes the air fryer is the perfect way to cook these up.
