TOP 5 EASY VEGAN THANKSGIVING RECIPES
Just because you aren’t eating Turkey this Thanksgiving doesn’t mean you have to miss out on a good meal. You can still have the taste of Turkey and all the fixings without feeling tired this year after dinner. Here are my Top 5 Easy Vegan Thanksgiving recipes, that include cornbread dressing, mac and cheese, sweet potato pie and more, that I hope you’ll enjoy too!
THE MAIN COURSE
A Turkeyless Roast
Every year I purchase the Turkeyless Roast from Trader Joes. I bake the roast according to package directions, and layer it in a casserole. As one of the only vegans in my family, I bring my own food for Thanksgiving, which can get heavy. This recipe has been so helpful in helping me minimize the amount of dishes of food I bring because I layer this roast like a casserole to include sides like Mashed cauliflower and sweet potatoes.
To do this, you’ll cook your Turkeyless Roast according to package directions.
Once it’s done cooking set aside.
In a casserole dish, first layer mashed cauliflower, then place your Turkeyless Roast in the center.
Around your roast, layer on top of the mashed cauliflower and around the roast your sweet potatoes.
You can easily take this with you and warm up upon arrival.
