THE GREAT FULL GIRL’S RECIPE TIPS FOR VEGAN ENCHILADAS:
Enchilada Filling: I like to use a vegan egg substitute called JUST egg or you can make your enchilada fillings with tofu scramble.
Plant Based Meat Options: I used Morning Star crumbles for this recipe but I also recommend the beefless ground from Gardein or you can use chopped mushrooms.
Plant Based Queso Options: For this recipe I used Credo Queso, but I also recommend The Honest Stand and Siete brand.
