BBQ Tofu Sweet Potato Buddha Bowls
THE GREAT FULL GIRL’S RECIPE TIPS FOR BBQ TOFU SWEET POTATO BUDDHA BOWLS:
How do you drain tofu quickly?
I love cooking with tofu but sometimes you want to make it quickly but with tofu you have to drain it properly so it will be firm enough to cook. If you need to make tofu quickly, you can drain your tofu fast by first draining any excess water out of the package. Then place the block of tofu on a plate or cutting board. Then cover it with a paper towel and place another small plate or cutting board on top of it. For quicker results, I also add a can of vegetables on top. You can easily drain the tofu properly this way for about 10-15 minutes before you start cooking. To avoid all these steps though, you could invest in a tofu press here.
What can you use as a base for your Buddha bowls?
For this recipe I used sweet potatoes as the base but but you can also add in some brown rice or quinoa too to make it even more filling.
Can I make this recipe oil free?
Absolutely! Instead of using olive oil with your sweet potatoes or broccoli, simply use vegetable broth or coconut aminos. I just like to add a little oil to make the sweet potatoes a little crispy before they simmer so they are crunch on the outside but soft on the inside. But you can absolutely avoid oil for the recipe to make it an oil free dish.
