Vegan Moons Over My Hammy Breakfast Sandwich
I used to love the Moons Over My Hammy Sandwich at Denny's before going vegan. Here's a simple vegan version you can make at home with bagels, Tofurky deli slices, JUST egg, Field Roast Cheese, and Kale.
INGREDIENTS:
Bagels (These are my favorite type of Bagels. You can typically find them at Whole Foods in the freezer aisle)
Sautéed Kale
FOR THE AIOLI
Mustard
Sriracha Sauce
INSTRUCTIONS:
Saute your kale in a skillet with either olive oil or vegetable broth. I like to use vegetable broth and season with garlic powder and pepper.
Cook and scramble your JUST egg.
Toast your bagels
Make your aioli with a combination of vegan mayo, sriracha, and mustard and mix well.
Cut your bagel in half
Spread your aioli on one of your bagel slices
Add your Tofurky deli slices, then your scrambled JUST egg, vegan cheese, and Kale.
Pop your breakfast sandwich in the oven at 350 for 5 minutes to melt your cheese and make your breakfast sandwich crispy.
Serve hot and enjoy!
