Easy Fried Tofu Bowls With Lemon Tahini Dressing

When I am feeling a little lazy this is my go-to easy dinner dish that tastes oh so good and hits the spot every time! 

Here's What You'll Need: 

Ingredients: 

  • 1 package of extra firm tofu

  • 1 zucchini

  • 1 carrot

  • 1 tsp garlic salt

  • 1 tsp pepper

  • 1 tbsp sesame oil

  • 1 tbsp soy sauce

  • 2 tbsp olive oil

  • 1/3 cup vegetable oil

  • Tahini Lemon Dressing

  • 1 cup cooked rice

  • *Optional-Cilantro and sliced avocado to top

Instructions:

  • Cut into cubes hard firm tofu. Be sure to drain the water from the tofu as much as possible. Let the tofu marinate with sesame oil, soy sauce, garlic salt, and pepper.

  • Slice zucchini and carrots and sauté in a pan with olive oil, sea salt, pepper, and garlic salt until soft. I like to add a little bit of sweet corn but that is optional.

  • In a heated pan of vegetable oil fry your tofu for about 8-10 minutes or until golden brown. Toss over white rice and sprinkle with cilantro and lemon tahini sauce. You can find this in the salad dressing aisle at Whole Foods. Feel free to add sliced avocado as well.

Voila! A meal for under $10 and easily feeds 2-3 people. Enjoy!
