Savory Vegan Cornbread Dressing

What is the difference between stuffing and dressing?
I’ve often wondered this myself and found that the largest difference between the two terms is that stuffing is made to “stuff” most traditionally a turkey (which now to me as a vegan is just super weird!) and dressing is the mixture created in a separate pan from the turkey. Since this is a vegan recipe and no turkeys were harmed in the making of this dish, we are going to call this dressing!
Growing up, dressing was one of my favorite sides to the Thanksgiving meal and as an adult I’ve created my own very special recipe that never disappoints. One of the biggest changes I made to my mother’s recipe is by making the base of my dressing with cornbread as opposed to regular white bread. I’ve found the cornbread base gives this dish something extra special and really allows the flavors to come through.
Is Cornbread Vegan?
The short answer is no. Most of the traditional cornbread recipes and conventional pre-made cornbread mixes contain animal products but Jiffy now has a vegetarian cornbread mix that is vegan as long as you use your own egg replacer. This is the brand I currently use along with Bob’s Red Mill egg replacer to make the base of this dressing.
Recipe Recommendations:
To make this dish is very simple, I recommend making it easy for yourself by buying pre-cut frozen veggies. I like to use an onion and bell pepper blend but you can also easily cut these up fresh if you’d like. I also use Gardein’s Beefless Ground in the recipe as well but this is totally optional.
