There’s nothing like a pastel themed brunch for Easter Sunday that the whole family can enjoy. These Top 5 Vegan Easter Brunch Ideas are easy, quick, festive, and sure to please both sweet and savory taste buds.

What You’ll Need: 

If you want an easy easter brunch idea, look no further because these funfetti waffles will delight both you and the kids on Easter Sunday Morning. The secret, using Birch Benders Classic Recipe. This premade pancake mix is vegan friendly and the best part is you only have to add water to the mix for the perfect pancake or waffle batter. Once you’ve got the perfect batter consistency, add in those fun rainbow sprinkles and enjoy! 

For toppings, I love to use vegan whipped cream from So Delicious cocowhip, and powdered sugar from Wholesome

What You’ll Need: 

  • 1 loaf of french bread 

  • 2 Beets, cut into cubes and boiled

  • 3 cloves of garlic

  • 1 tbsp olive oil 

  • 1 cup of cooked chickpeas

  • 4 tbsp water

  • 1 tbsp lemon juice

  • 3 tbsp tahini

  • 1 tbsp agave 

  • 1 Cucumber (optional) 

  • Broccoli Sprouts (optional) 

Instructions

  1. In a food processor, first mix together 4 tbsp water, 1 tbsp lemon juice, 3 tbsp tahini, and 3 cloves garlic.

  2. Once smooth, add in your cooked beets, and agave and blend until smooth. Depending on how savory you want it add more tahini. If you want it more sweet, add more agave. I personally like it a bit on the sweet side as the agave brings out the taste of the beets.

  3. Spread the hummus dip on each slice of bread and garnish with sliced cucumbers and broccoli sprouts 

Tip: 

I like to toast my bread slices in the oven just a bit so the bread is crispy on the outside yet soft on the inside.

What You’ll Need: 

  • Sourdough Bread 

  • 1 ripe Large Hass avocados 

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp garlic salt

  • 1 tsp paprika

  • 1 tsp sea salt

  • 1 tsp pepper 

  • Coconut Bacon 

  • Broccoli Sprouts 

  • Just Egg (or scramble tofu if whole foods plant based) 

  • Vegan Queso (Optional) 

Instructions: 

  1. Toast Sourdough bread to your liking

  2. Mix together Large Hass Avocado with 2 tbsp olive oil, 1 tbsp lemon juice, 1 tsp garlic salt, 1 tsp sea salt, and 1 tsp pepper. 

  3. Make your scrambled eggs using Just Egg according to product instructions

  4. Take your avocado mix and spread over your toast

  5. Next layer on your vegan scrambled eggsIf using vegan queso, drizzle vegan queso on top of your scrambled eggs. (You can also drizzle vegan shredded cheese on top if you don’t have any vegan queso on hand)

  6. Sprinkle your coconut bacon on your toast 

  7. Last but not least, add your broccoli sprouts for garnish. I also love to drizzle some coconut sriracha sauce on top for a little extra kick!

What You’ll Need

Instructions

  1. In a skillet add oil, frozen bell peppers, and gardein beefless ground (cook according to package instructions). 

  2. Add in mushrooms and hashbrowns, cook until browned. 

  3. Next, add in chopped kale 

  4. Lastly, add in your Just Egg and green onions and cook until your eggs are scrambled with the rest of your ingredients. 

  5. Top with your favorite shredded vegan cheese, sliced avocados, and sriracha coconut sauce (optional of course)

What You’ll Need:

  • 1 cup of Elbow Pasta 

  • ½ diced red onion, diced

  • 1 diced large carrot 

  • 2 diced stalks celery

  • ¼ cup diced green onion

Dressing:

  • 1 cup vegan mayo

  • 1/4 cup apple cider vinegar

  • 1 tablespoon dijon mustard

  • 1 tablespoon agave

  • 1/2 teaspoon pepper

  • 3 tbsp dill 

  • 1 tsp garlic salt

  • 2 tsp paprika 

Instructions:

  1. Cook and drain your elbow pasta noodles

  2. In a large bowl add elbow pasta noodles, red onion, green onion, carrots, and celery

  3. Next, add in ingredients for your dressing

  4. Mix all ingredients together well

  5. Store in the refrigerator to chill for about 20-30 minutes before chilling.
