Wondering what to bring to Thanksgiving or Christmas dinner that’s an easy and inexpensive side dish?

Look no further because this is seriously the best Brussels sprouts recipe that everyone will love! Before going vegan I didn’t eat many greens but after I went vegan I slowly started incorporating more greens in my diet. Brussels sprouts were one of my favorite vegetables during this transition to a plant based life. 

So how good are Brussels sprouts for you?

Well Brussels sprouts are actually high in fiber, vitamins, minerals and antioxidants which makes them very nutritious. It is also believed that Brussels sprouts can reduce the risk of cancer as well as decrease inflammation and help with blood sugar control which let’s face it around the holidays this is such a great side to add around the table for a health conscious option that still tastes delicious! 

I find that Brussels sprouts compliment those other beloved Thanksgiving dishes like mashed potatoes, mac and cheese, and sweet potatoes so well! I’ve tried many recipes but this one is honestly my favorite and it’s always a hit when I bring it to potlucks, holiday dinners, and family gatherings. 

What’s the best way to prepare Brussels Sprouts?

Best way to prepare Brussels sprouts is after you've washed, peeled, and cut off the stems I like to cut them in half, makes cooking them a bit easier. I then place them in a pyrex pan and drizzle a good amount of olive oil on them to make sure they are all evenly coated, this is important because you don't want them to come out too dry once they've been cooked. After the olive oil, I use pepper, sea salt, paprika, garlic salt, and finish off with a little balsamic. 

Tip: It's always best to under season then to over season because then you can always add more if you need. 

I put them in the oven at 375 for about 15-20 minutes and then flip them and drizzle again with some more olive oil and seasoning. Put them in the oven for another 10-15 minutes (this really all depends on how crispy you want them to be) and if you are like me I love some of the edges to be crispy. 

After taking them out of the oven, I typically drizzle just a little extra balsamic as it tends to soak up in the baking process. Some people also like parmesan on their Brussels sprouts and if you do I recommend using Go Veggie’s Parmesan Cheese to add. Serve as soon as possible to your Brussels sprouts are warm and crispy to enjoy with your friends and family!
