When my boyfriend and I first went vegan there was a night when we just did not want to cook. We were exhausted from the day and just wanted a burger. But now that we were vegan, we really didn't know where we could find a vegan burger so we settled on Chinese takeout. I hopped onto my UberEats app and typed in "vegan". I thought to myself surely nothing would pop up, but to my surprise the first option on my screen was Revolution Vegan Kitchen. I was shocked and quickly opened the menu to see they had a burger and curly fries and mac and cheese and...notzarella sticks?! I ordered just about one of everything it seemed on the menu and when our food was finally delivered my boyfriend and I did something we never do-we ate in silence. It was that damn good! We didn't even talk to each other until after we were done eating. Our minds were completely blown away by how amazing the food was! Now Revolution Vegan Kitchen is one of our favorite go-to spots either when we are in a rush, don't feel like cooking, or for a simple date night out at the food park to catch some live music on a Saturday night. Anytime I have friends or family in town, this is the first place I take them to calm their nerves about eating vegan for their stay with me and the response is always "If this is what vegan food is, I can do this!".

I had the pleasure of sitting down recently with Franky and Sarah, the amazing owners and creators behind South Austin's Vegan food truck, Revolution Vegan Kitchen. To say their food here is delicious is an understatement. The food here is more than just food, it's a form of art made with love in a rebellion against our current food system. It's justice served on a biodegradable plate demanding a culinary revolution with no apologies and a side of vegan mac and cheese. What Franky and Sarah have done here is truly revolutionary in food. Day in and day out they are transforming our favorite meals like tacos, mac & cheese, Philly cheese steaks, and big juicy burgers into a vegan version. Although they are serving up delicious food everyday, their mission is greater than just food itself. Their food is a form of activism that says you don't have to eat animals to have a delicious meal but in fact you can have peace and your tacos too!

Sarah and Franky became vegan back in 2011, with Sarah going vegan first while Franky was deployed in the military. Sarah said she first went vegan, not because of health, the animals, or the planet, but rather to one-up a friend she saw on Facebook who was celebrating her vegetarian anniversary. Sarah thought she could do one better and go vegan for 30 days. Over the course of her personal vegan challenge, Sarah began to research more about what vegan food consisted of. She said finding Colleen Patrick Goudreau's 30 Day Vegan Challenge Book one day at Barnes and Noble is when everything changed for her because well, she wasn't going to have to eat just salads anymore! Through the book she felt compelled to start creating delicious vegan food, unbeknownst to Franky at the time of his deployment, who suddenly got the call one day that his wife was now vegan, to which Franky first replied "Vegan? What is vegan? Is that a disease?!" 

Franky quickly followed suit however of his wife's decision to become vegan when he too saw the benefits of living a vegan lifestyle. While Franky was in the military, although he looked physically fit, was failing all of his physical health tests. After doing some research on his own and finding what plant-based foods and supplements worked best for him, he said he dropped the weight but was able to physically perform at his job better than ever before. It was enough to convince him that going vegan was the right decision as well as adopting a philosophy of non-violence.

Now that Franky was on board with Sarah's decision to become vegan, they had dreams to bring about a revolution, but they weren't quite sure how they were going to share their newfound message of veganism and nonviolence with the world. They had played around with ideas of a farm or perhaps a sanctuary until Sarah got the idea of opening up their own restaurant after being inspired by one of their favorite places to eat in Orlando called Ethos Vegan Kitchen

And so with their move to Texas, Sarah and Franky embarked on making their dreams into a reality. Sadly, they said they were quickly hit with roadblocks, however, after coming to Austin where the rent has increased immensely, making it difficult for small business owners in the restaurant industry to open up a brick and mortar storefront. But the rent in Austin wasn't going to stop their revolution, and so instead of opening a restaurant, they opened a food truck in South Austin's Thicket Food Park

Today, they are busy along with their talented team creating their childhood favorites such as Al Pastor and Carne Asada tacos as well as popular items like the Buffalo Chick'n wraps and Notzarella sticks. Although Sarah and Franky are hard at work creating delicious food, they go a step further to incorporate biodegradable plates and utensils as well as practice composting to promote sustainability. They have also collaborated with local Austin organizations to create events that benefit the welfare of animals at local sanctuaries and shelters.

They aren't sure yet what their next venture will be, but what they do know is that they enjoy coming to work every day, to craft delicious meals for vegans and non-vegans alike, and stand by their mission to promote the welfare of people, the planet, and the animals we share it with through something as simple as just damn good food!
