In addition to being a vegan lifestyle blogger, I am an Operations Manager for a local tech company and there are nights where I get home and I am exhausted and truly don’t feel like cooking, even though I love to cook. I also have a mountain of credit card debt to chip away at and some weeks I am tight on funds. This is one of those meals you throw together in an act of desperation that actually works! It takes about $10-$15 to make and can easily feed 4-5 people or left overs if you’re flying solo.

These quesadillas also have a lot of really great nutrients in them such as black bean, lentils, spinach, and mushrooms. So even though it may seem you are cheating on your diet, you actually are being quite good with this meal!
