  • What is a po’boy sandwich?

    • Po'boy sandwiches are a traditional sandwich from Louisiana. They typically consist of meat or fried seafood, like shrimp, crawfish, fish, oysters or crab but for this recipe we are creating a compassionate alternative using oyster mushrooms!

  • Where can I find oyster mushrooms?

    • You can find oyster mushrooms in health food stores typically like Whole Foods or you can also find them in many of your local Asian markets.

  • What is remoulade sauce?

    • Remoulade sauce originated in France and most closely resembles tarter sauce made traditionally with a combination of mayo, herbs, pickles, and sometimes capers. For this recipe however we are going to use simple every day ingredients to make a quick vegan remoulade sauce using vegan mayo, mustard, sriracha, lemon juice, and cajun seasoning.

  • What brand of vegan mayo should I use?

  • What kind of bread should I buy?

    • You can use any french bread or hoagie sandwich style bread, just make sure that you read the label to ensure there’s no added eggs or milk.

  • What type of pickles should I use on my po’boy sandwich?

    • For this recipe I used dill pickles, it pairs best with the remoulade sauce.
