Potachos with Credo Queso!

What are Potachos?

I first saw this dish after watching the premiere of The Game Changers. In the movie, plant-based chef Charity Morgan, makes this as one of the many meals she prepares for some players of the Tennessee Titans team who have taken up a vegan diet to improve their overall health and performance on the field. I had never thought of making this dish before but the next day I went out and bought everything I needed for these incredible loaded potachos.

A cheap, vegan meal!

One thing I love about this dish is that it is extremely affordable! When cooking this for my boyfriend and I, three large russet potatoes are plenty enough for us including a little leftover. I also live close to a Whole Foods with a hot bar so I typically get all of the fixings already cut up for about $3 but you can easily find these fixings in the produce section depending on how you like to make your traditional nachos. Anything you would typically put on your nachos you can put on top of your potachos. 

But what about the queso? 

As a vegan, good queso options can be tough to find at first but now there are so many options becoming available. My favorite brand of queso to use for this recipe is Credo Queso, particularly their Original Medium spice is perfect for these potachos. Credo queso has by far been my favorite queso to use since becoming vegan and trust me I’ve tried a lot of them! It has the perfect consistency and the right amount of spice for either nachos or potachos. So what can you top the potachos with? 

In addition to queso, I recommend topping off these potachos with guacamole, green onions, jalapenos, vegan sour cream, vegan cheese, black beans, pickled onions, and if you’d like a plant-based meat, Gardein’s beefless ground pairs perfectly with this dish. However you like them, this dish is filling and easy to make on any budget!
